Soft, creamy warm feta bathed in tomato sauce
Ingredients
- 2 tbsp olive oil
- 1-1/2 cups (1 large) onion, small dice
- 3 cloves garlic, sliced
- 1 Tuscan Blend
- 28oz can plum tomatoes
- 2 x 8oz blocks of Feta cheese
- extra olive oil for serving, crusty bread
Instructions
- Pressure Cook: 1) heat oil on sauté function low; cook onion for 3-4 minutes 2) add garlic slices and cook for 2 minutes 3) Turn off sauté function 4) Stir in the Tuscan blend, & plum tomatoes 5) Lay the 2 pieces of Feta on top of the sauce 6) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 4 minutes. 7) Vent with Quick Pressure Release 8) Serve with extra olive oil drizzled on top and scoop with crusty bread
