Soft rib meat coated in a dry rub, served with a piquant Carolina BBQ sauce or your favorite sticky BBQ

Ingredients

  • 2 1/2 - 3 lbs pork baby back / spare ribs
  • Smoky BBQ blend
  • 1/2 cup cider vinegar
  • dipping sauce (optional) or your favorite BBQ sauce
    1/2 cup / 4 fl oz cider vinegar
    1/4 cup / 2 fl oz water
    2 tbsp tomato ketchup
    1 tbsp brown sugar
    1/2 tsp red pepper flakes
    1/4 tsp salt
    dash of tabasco

Instructions

  1. Slow Cook: 1) rub the pork ribs with the Smoky BBQ blend; transfer to the cooker (or refrigerate overnight) 2) add the cider vinegar to the pork in the cooker 3) cover and cook on LOW: 8-10 hours or HIGH: 4-5 hours 4) remove to serve
  2. Pressure Cook: 1) place the trivet in the Instant Pot 2) add the cider vinegar and water to the Instant Pot 3) rub the pork ribs with the Smoky BBQ blend and arrange upright on the trivet, around the inside edge of the cooker 4) Secure the cooker lid, seal pressure valve; cook on Manual/Pressure for 25 minutes 5) Natural Pressure Release for 10 minutes before removing to serve

Tips

optional serving suggestion: 1) Remove the ribs after cooking and preheat the oven to broil 2) Place on a foil lined baking sheet and brush the ribs with BBQ sauce 3) Place in the oven for 5 minutes or until caramelized
